A foray into the Black Forest…

With a chill in the air and the aroma of bonfires, this time of year usually is the start of chalet kitchens in the mountains calling myself and Baz. However this year, our new commercial kitchen is calling for a damn good clean and for some test cooking to begin!!

So now that the kitchen is clean it’s time to start coming up with some puddings for ‘Little Beast’. With cherries being in season and October being the month of all things chocolate (London and Paris chocolate shows are this month) I thought it would be rude not to use these as the two main ingredients.

We have all heard of the infamous Black Forrest Gateaux especially with its recent appearance on the great British bake off!

So here is Pudding and Prosecco’s.

Dark Chocolate Meringue with layers of Whipped Chocolate Cream, Kirsch soaked Cherries and a Black Cherry Jelly.

Pudding and Prosecco were perfect for me, with their use of fresh and seasonal ingredients and delicious Prosecco cocktails perfect for any event. Their food is utterly delicious and her presentation was beyond bespoke! I can't recommend them enough!
